VMWare Maximum Network Interfaces
I called VMWare support directly to figure out the answer to this question, since I Googled for about 5 minutes and did not find the answer there. This is prompted due to the ESX servers here growing to 10 physical Ethernet ports per server. The answer is as follows

VMWare ESX 3 maximum virtual interfaces per virtual switch

VMWare ESX 3 maximum total virtual interfaces
